HEAD CHEF
Overall role
The Head Chef is responsible for assisting the Camp Administration in ensuring the effective and efficient management and delivery of the Catering Services.
The Head Chef has a key role to play in ensuring that the quality of food and catering meets these standards.
Line responsibilities
- Functionally reports to the Camp Manager
- The Head Chef is line manager for kitchen staff.
- The Head Chef is responsible to the catering function Administrator for catering administrative and logistical aspects
- To manage the kitchen staff and ensure agreed standards are achieved
- To develop menus and products to suit the Camps activities
- To ensure compliance with all agreed food safety systems as required by the Camp Manager
- To promote and participate in an alert and positive approach to Health & Safety in the delivery of the camps catering services.
Kitchen Management and Food Preparation
- Ensuring that all food products are prepared and presented to high standards
- Menu planning, including evening and daytime menus
- Ensuring that the correct foods and volumes are in stock to support the menu
- Ensuring equipment is properly maintained and operated – report breakages to Camp Administration
- Providing effective management for all staff reporting to this post
- Report absenteeism, discipline problems to Camp Management
- Assist with preparing weekly / monthly staff rotas for kitchen staff and the day to day allocation of work
- Ensure that staff adhere to shift start and end time
- Motivating, managing and training staff to ensure standards are achieved
- Train staff in all aspects of catering, Hygiene and safety.
- Ensuring the highest standards of hygiene and safety within the kitchen areas
- Ensure that all kitchen staff adhere to personal hygiene and dress code
- Promoting and participating in an alert and positive approach to Health & Safety and appropriate working methods at all times
- Assisting with risk assessments for the department
- Maintaining daily checklists and ensuring relevant paperwork is maintained accurately and up-to-date.
- Ensure the correct use, cleaning and maintenance methods of all kitchen appliances
- The correct use and application of cleaning detergents
- Monitor the performance of all cleaning personnel
